We at McTavish Shortbread take great pride in the long shelf life of our product, without using preservatives.  Our philosophy is to get the product to you with the longest shelf life possible; meaning we don't keep cookies on the shelf or in a warehouse awaiting shipment.  We bake, then ship to you as quickly as possible.  Our shortbread retains its delicious qualities and appearance best when kept in a cool, dry place away from direct light.  It may be frozen to extend shelf life.
